Retire, acrescente a baunilha, o creme de leite e misture bem. Para a massa, em uma tigela, misture as gemas, o açúcar, a maisena, o suco, a farinha e o fermento. Retire e adicione delicadamente as claras em neve. &lt;/p&gt;&lt;p&gt;Despeje em uma fôrma de fundo removível untada e enfarinhada e leve ao forno, preaquecido, por 30 minutos ou até que, ao enfiar um palito, ele saia limpo. Retire, desenforme, corte a parte de cima da massa e reserve. Coloque de volta na fôrma e, com o auxílio de uma colher, retire parte da massa, deixando dois dedos de espessura nas laterais e no fundo. &lt;/p&gt;&lt;p&gt;Misture as frutas ao creme reservado, coloque dentro da caixa e cubra com a massa que foi tirada, arrumando por igual. Passe parte do chantilly nas beiradas do bolo e coloque a tampa da massa. Leve à geladeira por 1 hora, retire e desenforme. Cubra com o chantilly restante e com o coco ralado.
